I’ve been coming home late a few nights a week due to my TA duties. On those evenings I rarely want to cook. This has lead to my new motto:
In a hurry? Eat some curry!

My friend Gomed put me on to this stuff: India House Kahri. It gets his Delhi stamp of approval. It’s rather tasty and easy to prepare: just heat it and serve over some basmati rice. Also, he related that the approved method of basmati rice preparation is to heat water and rice in a 2:1 ratio, uncovered, until the water is gone. Put a lid on and let stand 10 minutes.
Has the added benefit of making your kitchen smell nice.

gotta love curry. for me, the limiting factor in terms of speed has always been the rice… usually takes longer to cook rice than the other stuff…
also good: thai curry paste+ coconut milk+ carrots+ onions+ (preferably pre-roasted) potatoes over rice

here is an unusual curry-based idea of mine: take storebought fresh pizza dough, strech like for making standard pizza. top with canned/jarred curry like pizza sauce, cover with cheese (standard pizza cheese will do fine), peas, potatoes, perhaps peppers. bake on a pizza stone like normal pizza. i tried an experiment with a toast-pizza in the toaster oven, and that worked fine, so next would be the full-scale job.
Luke, you never disappoint. You offer an “unusual curry-based idea” and your first ingredient is pizza dough.
It sounds kinda good, actually.
if only i could convice my parrents… i’ll say “i have an idea” and there are groans or other such instuctual-skeptical remarks…
Hooray for karhi! I’ve been doing the very same thing since September. I haven’t had it the last month or so, but I bought a can of it the other day. Something else that’s tasty is tikka masala. I have a little table-top grill, so I grill a chicken breast, chop it up, cook the rice (I usually make jasmine rather than basmati), and then heat the chicken up in the sauce along with a fist-full of frozen peas. Delish!
